  • 4 cloves Garlic (Do not add too early to avoid burning.)
  • 2 tbsp Tomato paste
  • 28 oz Crushed tomatoes or tomato sauce
  • 1 cup White wine (Dry wine preferred.)

  • 2 tbsp Olive oil

Garnishes

  • 1/4 cup Fresh basil or parsley (For finishing.)
  • to serve Parmesan cheese (Grated or shredded.)

Instructions

Preparation

  1. Boil pasta water and salt it well.
  2. Slice peppers and onion into thin strips.
  3. Prepare garlic by mincing it.

Cooking

  1. In a large skillet, brown the sausage over medium heat until cooked through, then remove from skillet.
  2. In the same skillet with drippings, add sliced peppers and onions. Cook until softened.
  3. Add minced garlic and tomato paste; stir for about a minute.
  4. Deglaze the skillet with white wine, scraping the bottom to loosen browned bits.
  5. Add crushed tomatoes and Italian seasoning; bring to a simmer.
  6. Return sausage to the skillet; simmer for an additional 5 minutes.
  7. Cook pasta until al dente, reserve a cup of pasta water, and drain the rest.
  8. Add the cooked pasta to the skillet, tossing to combine and adding reserved pasta water as necessary.
  9. Finish with fresh basil or parsley and serve with parmesan.

Notes

For best results, use dry white wine for flavor. Adjust heat by choosing sausage type and adding red pepper flakes to preference.
