- 1.5-2 pounds boneless skinless chicken breasts or thighs (Slice thick breasts in half for quicker cooking)
- 1 tablespoon olive oil or avocado oil (For searing the chicken)
- 1 cup jarred salsa (Choose mild to hot based on your preference)
- 1 can black beans (Drained and rinsed)
- 1 cup corn (Frozen, canned, or leftover cooked corn)
- 1 cup shredded cheese (Monterey Jack, cheddar, or Mexican blend) (Added at the end for melting)
Seasonings
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika (For a smoky flavor)

Instructions
Preparation
- Slice chicken breasts in half lengthwise if they are thick.
- Mix dry seasonings in a small bowl and coat both sides of the chicken.
Cooking
- Heat a large skillet over medium-high heat with a little oil. Sear chicken for about 3 to 4 minutes per side, until golden brown.
- Lower heat to medium. Add salsa, black beans, and corn around the chicken, spooning a little salsa over the top.
- Cover and simmer for 8 to 12 minutes, depending on thickness, until chicken is cooked through.
- Sprinkle cheese all over, cover again for 2 to 3 minutes until melted.
Finishing Touches
- Finish with optional toppings like cilantro and a squeeze of lime.
Notes
For a creamier version, stir in a few spoonfuls of sour cream or Greek yogurt at the end. To make it spicier, use hot salsa or add jalapenos.
