Instructions

Preparation

  1. Ensure the turkey breast is fully thawed and remove from the fridge 30-45 minutes before roasting.
  2. Pat the turkey dry with paper towels to ensure crispy skin.
  3. Season the turkey generously with salt and pepper.
  4. Place the turkey on a bed of sliced onion, carrots, and celery in the roasting pan.

Herb Butter Application

  1. Mix softened butter with garlic, herbs, salt, pepper, and lemon zest if using.
  2. Gently loosen the skin over the turkey breast and create a pocket.
  3. Rub the herb butter under the skin, spreading it evenly.
  4. Rub a small amount of butter over the skin of the turkey.

Roasting

  1. Preheat the oven to 425°F (220°C).
  2. Roast the turkey for about 20 minutes to start browning.
  3. Lower the temperature to 350°F (175°C) and continue roasting.
  4. Cook for approximately 20-25 minutes per pound for boneless, slightly longer for bone-in.

Resting and Carving

Gravy Making
