Description

Simple yet delicious, Roasted Broccoli and Carrots combines garlic and sesame flavors for a veggie side that’s crispy, sweet, and easy to prepare.


Ingredients

Vegetables

  • 3 to 4 cups broccoli florets (about 1 large head) (Cut into bite-sized pieces; don’t toss the stems.)
  • 2 to 3 medium carrots, peeled (Slice diagonally into 1/4 inch thick pieces.)

Oils and Sauces

  • 2 to 3 tablespoons olive oil (or avocado oil) (For roasting.)
  • 1 to 2 teaspoons sesame oil (Use sparingly, as it is very strong.)
  • 1 tablespoon soy sauce or tamari (For added flavor.)

Flavorings

  • 3 cloves garlic, minced (Can substitute with 1 teaspoon garlic powder.)
  • 1 to 2 teaspoons sesame seeds (For topping.)
  • to taste salt and black pepper
  • optional pinch of red pepper flakes (For additional heat.)


Instructions

Preparation

  1. Preheat the oven to 425°F (220°C) and line a sheet pan with parchment paper for easy cleanup.
  2. Prepare the broccoli and carrots as described.

Roasting

  1. Add the broccoli and carrots to the pan. Drizzle with olive oil, sesame oil, and soy sauce.
  2. Sprinkle on minced garlic, salt, pepper, and sesame seeds. Toss with hands or spatula until coated.
  3. Spread the vegetables into a single layer on the pan.
  4. Roast in the oven for 18 to 25 minutes, checking for browning and tenderness.

Serving

  1. Optionally, squeeze a little lime or drizzle honey before serving to enhance flavor.

Notes

For even roasting, cut vegetables into similar sizes. If the broccoli cooks too fast, check and remove when perfectly browned.
