Description

Creamy and cheesy bell peppers stuffed with a delicious ricotta filling, perfect for a cozy weeknight dinner.


Ingredients

Bell Peppers

  • 4 large bell peppers (Any color you like.)

Cheese Filling

  • 1.5 cups ricotta cheese (Use a ricotta you like.)
  • 1 cup shredded mozzarella (Plus extra for topping.)
  • 1/3 cup grated Parmesan cheese
  • 1 large egg (Helps the filling set.)
  • 2 cloves garlic, minced
  • 1-2 teaspoons Italian seasoning
  • salt and black pepper (To taste.)
  • 1-2 cups spinach, chopped (Optional but recommended.)

Sauce

  • 1 cup marinara sauce (For the baking dish.)

Optional Add-Ins

  • cooked rice, quinoa, chopped mushrooms, or diced zucchini (Add if desired.)


Instructions

Preparation

  1. Preheat the oven to 375°F (190°C).
  2. Spread about 1 cup of marinara sauce on the bottom of a 9×13 inch baking dish.
  3. In a bowl, stir together ricotta, mozzarella, Parmesan, egg, garlic, Italian seasoning, salt, pepper, and spinach if using.
  4. Taste and adjust seasoning as necessary.

Stuffing and Baking

  1. Spoon the filling mixture into each prepared pepper, filling them generously but not packing it down.
  2. Top each pepper with a small handful of mozzarella cheese.
  3. Cover the baking dish with foil and bake for 30 minutes.
  4. Remove the foil and bake for an additional 10 to 15 minutes until the peppers are tender and the tops are golden.

Serving

  1. Let the peppers rest for 5 minutes before serving.
  2. Serve warm with additional marinara on the side.

Notes

Peppers can be prepped ahead of time and baked later. Best served with a side salad or garlic bread.
