Creamy and cheesy bell peppers stuffed with a delicious ricotta filling, perfect for a cozy weeknight dinner.
Ingredients
Bell Peppers
- 4 large bell peppers (Any color you like.)
Cheese Filling
- 1.5 cups ricotta cheese (Use a ricotta you like.)
- 1 cup shredded mozzarella (Plus extra for topping.)
- 1/3 cup grated Parmesan cheese
- 1 large egg (Helps the filling set.)
- 2 cloves garlic, minced
- 1-2 teaspoons Italian seasoning
- salt and black pepper (To taste.)
- 1-2 cups spinach, chopped (Optional but recommended.)
Sauce
- 1 cup marinara sauce (For the baking dish.)
Optional Add-Ins
- cooked rice, quinoa, chopped mushrooms, or diced zucchini (Add if desired.)
Instructions
Preparation
- Preheat the oven to 375°F (190°C).
- Spread about 1 cup of marinara sauce on the bottom of a 9×13 inch baking dish.
- In a bowl, stir together ricotta, mozzarella, Parmesan, egg, garlic, Italian seasoning, salt, pepper, and spinach if using.
- Taste and adjust seasoning as necessary.
Stuffing and Baking
- Spoon the filling mixture into each prepared pepper, filling them generously but not packing it down.
- Top each pepper with a small handful of mozzarella cheese.
- Cover the baking dish with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 10 to 15 minutes until the peppers are tender and the tops are golden.
Serving
- Let the peppers rest for 5 minutes before serving.
- Serve warm with additional marinara on the side.
Notes
Peppers can be prepped ahead of time and baked later. Best served with a side salad or garlic bread.
