Description

A hearty salad featuring wild rice, crisp apples, and kale, dressed with a sweet and tangy maple cider vinaigrette.

Salad Ingredients

  • 1 cup Wild rice (or a wild rice blend)
  • 4 cups Kale (curly or lacinato, chopped)
  • 2 cups Apples (cored and chopped (Honeycrisp preferred))
  • 1 cup Green onions (or thin sliced red onion)
  • 1/2 cup Dried cranberries (optional, but adds fall flavor)
  • 1/2 cup Toasted pecans or walnuts (for crunch)
  • 1/2 cup Crumbled goat cheese or feta (optional)

Maple Apple Cider Vinaigrette

  • 1/4 cup Maple syrup
  • 1/4 cup Apple cider vinegar
  • 1/4 cup Olive oil
  • 1 tbsp Dijon mustard
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1 pinch Cinnamon (optional, for cozy flavor)


Instructions

Prepare Wild Rice

  1. Rinse the wild rice in a fine mesh strainer, then add it to a pot with 3 cups water and a pinch of salt.
  2. Bring to a boil, then lower the heat and simmer uncovered for 35 to 50 minutes until the grains split open.
  3. Drain excess water and let the rice cool on a plate.

Massage the Kale

  1. Strip the leaves off the tough stems and chop into bite-size pieces.
  2. Sprinkle a pinch of salt and a splash of olive oil or dressing over the kale, then massage for 1 to 2 minutes until it softens.

Make the Dressing

  1. In a jar, combine maple syrup, apple cider vinegar, olive oil, Dijon mustard, salt, and pepper.
  2. Shake well to combine and taste, adjusting sweetness and acidity as necessary.

Assemble the Salad

  1. In a large bowl, add the massaged kale and pour in some dressing.
  2. Toss in wild rice, chopped apples, onions, cranberries, and toasted nuts, mixing gently.
  3. Taste and add more dressing as desired, then top with cheese if using.

Notes

Let rice cool before mixing to avoid soggy salad. Cut apples last to prevent browning. Store leftovers in an airtight container for up to 3 days.
