- 2 large Eggs
- 1 teaspoon Vanilla extract
- 1 tablespoon Red food coloring
- 1 teaspoon White vinegar
For the Cream Cheese Frosting
- 8 ounces Cream cheese
- 0.5 cups Butter
- 4 cups Powdered sugar
- 1 teaspoon Vanilla

Preparation
- Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
- In a bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- In another bowl, mix the sugar and oil, then beat in the eggs and vanilla.
- Stir in the red food coloring until the mixture is evenly tinted.
- Add the dry ingredients and buttermilk in turns, mixing just until no flour streaks remain.
- Stir in the vinegar.
- Fill the cupcake liners about two-thirds full and bake for 18 to 22 minutes.
- Let cupcakes cool completely before frosting.
Cream Cheese Frosting
- Beat the butter until creamy.
- Add the cream cheese and beat until smooth.
- Gradually add the powdered sugar, vanilla, and a pinch of salt until well combined.
Decoration
- Pipe a tall swirl of frosting on each cupcake.
- Decorate with candy eyeballs, crushed cookies, or other Halloween-themed toppings.
Notes
For a spooky look, drizzle red gel over the white frosting. Avoid using very dark Dutch-processed cocoa for better color.
