Ingredients

For the Skewers

  • 1 lb Chicken breast or thighs, cut into 1 to 1.5 inch chunks (Both cuts work well; thighs stay juicier.)
  • 1 packet Ranch seasoning packet or homemade blend
  • 3 cloves Garlic, fresh minced (or garlic powder in a pinch)
  • 1/2 cup Parmesan, grated, plus extra for finishing (Fresh grated preferred.)
  • 2 tablespoons Olive oil (To help everything cling and prevent sticking.)
  • 1 tablespoon Lemon juice, optional (Brightens the flavor.)
  • to taste Salt and pepper (Adjust according to preference.)
  • Skewers, metal or soaked wooden skewers (Soak wooden skewers for 20-30 minutes to prevent burning.)


Instructions

Preparation

  1. Soak wooden skewers in water for 20 to 30 minutes to prevent burning.
  2. Cut the chicken into even 1 to 1.5 inch chunks.
  3. In a large bowl, mix together olive oil, ranch seasoning, minced garlic, Parmesan, and lemon juice.
  4. Toss the chicken to coat it well with the marinade and let it rest for at least 20 minutes.
  5. Thread the chicken onto the skewers, spacing them apart to allow for even cooking.

Grilling

  1. Preheat the grill to medium to medium-high heat.
  2. Oil the grates to prevent sticking.
  3. Grill the skewers for 10 to 14 minutes, turning every 3 to 4 minutes, until the chicken reaches an internal temperature of 165°F.
  4. Sprinkle with additional Parmesan after grilling, if desired, and let rest for 5 minutes before serving.

Notes
