- 1 lb Chicken breast or thighs, cut into 1 to 1.5 inch chunks (Both cuts work well; thighs stay juicier.)
- 1 packet Ranch seasoning packet or homemade blend
- 3 cloves Garlic, fresh minced (or garlic powder in a pinch)
- 1/2 cup Parmesan, grated, plus extra for finishing (Fresh grated preferred.)
- 2 tablespoons Olive oil (To help everything cling and prevent sticking.)
- 1 tablespoon Lemon juice, optional (Brightens the flavor.)

- Skewers, metal or soaked wooden skewers (Soak wooden skewers for 20-30 minutes to prevent burning.)
Instructions
Preparation
- Soak wooden skewers in water for 20 to 30 minutes to prevent burning.
- Cut the chicken into even 1 to 1.5 inch chunks.
- In a large bowl, mix together olive oil, ranch seasoning, minced garlic, Parmesan, and lemon juice.
- Toss the chicken to coat it well with the marinade and let it rest for at least 20 minutes.
- Thread the chicken onto the skewers, spacing them apart to allow for even cooking.
Grilling
- Preheat the grill to medium to medium-high heat.
- Oil the grates to prevent sticking.
- Grill the skewers for 10 to 14 minutes, turning every 3 to 4 minutes, until the chicken reaches an internal temperature of 165°F.
- Sprinkle with additional Parmesan after grilling, if desired, and let rest for 5 minutes before serving.
Notes
