For the Gnocchi
- 2 large Russet potatoes (or Yukon Gold) (Use dry potatoes for lighter gnocchi.)
- 1 cup All purpose flour (Start with 1 cup and add more if needed to prevent stickiness.)
- 1 unit Egg yolk (Helps bind without making the gnocchi tough.)

For the Sauce
- 2 to 3 tablespoons Butter (For the sauce.)
- 4 to 6 cloves Garlic, minced (Measure with your heart if you love garlic.)

- 3/4 cup Parmesan, freshly grated (For the sauce.)

Instructions
Make the Gnocchi Dough
- Boil or bake the potatoes until very tender. Bake for drier texture.
- Let them cool slightly, mash until smooth, and make a mound on the counter.
- Sprinkle with salt and nutmeg, add egg yolk, then gradually work in flour until it becomes a soft dough.
Shape the Gnocchi
- Roll the dough into ropes, cut into small pieces, and roll into balls.
- Press gently with a butter knife for ridges and poke a dent on top to mimic a stem.
Cook the Gnocchi
- Bring a pot of salted water to a boil. Cook the gnocchi in batches until they float, then remove with a slotted spoon.
- Optionally, pan sear in butter for a couple of minutes for added texture.
Make the Sauce
- Melt butter in a skillet, add garlic and stir until fragrant. Do not brown.
- Add cream, simmer gently and stir in Parmesan little by little until melted and smooth.
- Add black pepper, taste for salt, then toss in the gnocchi to coat.
Serve
- Serve immediately with optional garnishes.
Notes
To store, keep cooked gnocchi in airtight container for up to 3 days. Freeze uncooked gnocchi for later use. For variations, consider adding pumpkin puree to the dough or using half and half instead of heavy cream.
