Soft, fluffy pumpkin donuts filled with a creamy pumpkin cream that tastes like cheesecake and coated in cinnamon sugar.

For the Donut Dough
- 3 cups all purpose flour
- 2 teaspoons instant yeast (or active dry yeast)
- 1 cup milk (warm)
- 1 cup pumpkin puree (not pumpkin pie filling)
- 1 large egg
- 4 tablespoons butter (melted)
- 1/2 cup brown sugar (packed)
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon ginger
- 1 teaspoon vanilla
For Frying
- 2-3 inches neutral oil (like canola or vegetable oil)
For the Filling
- 8 oz cream cheese
- 1 cup powdered sugar
- 1/2 cup pumpkin puree
- 1 teaspoon vanilla
- 1/2 teaspoon cinnamon
- a pinch salt
For Coating
- 1 cup granulated sugar
- 2 teaspoons cinnamon
- a tiny pinch salt
Instructions
Make the Donut Dough
- Warm the milk until it’s warm to the touch but not hot.
- Mix the warm milk with the yeast and a spoonful of the brown sugar; let it sit for about 5 minutes until foamy.
- Stir in pumpkin puree, egg, melted butter, vanilla, and the rest of the sugar.
- Add flour, salt, and spices. Stir until it starts looking like shaggy dough, then knead until smooth and soft.
Shape and Proof the Donuts
- Press the dough down and roll it out to about half an inch thick.
- Use a donut cutter or two round cutters to shape the donuts.
- Place shaped donuts on parchment squares and cover loosely with a towel to rise for 30 to 45 minutes.
Fry the Donuts
- Heat oil to around 350°F in a heavy pot.
- Fry donuts 1 to 2 minutes per side until golden brown, then drain on paper towels.
Make the Pumpkin Cream Cheese Filling
- Beat the cream cheese until smooth, then add powdered sugar, pumpkin puree, vanilla, cinnamon, and a pinch of salt.
- Beat until fluffy and refrigerate if too soft to pipe.
Fill the Donuts
- Once cooled, use a piping bag to fill donuts with cream cheese filling.
Make the Cinnamon Sugar Coating
- Mix sugar with cinnamon and a tiny pinch of salt, then roll warm donuts in the mixture.
Notes
These donuts are best served fresh, but can be stored in the fridge for 3 days.
