Ingredients
For the Cookies
- 2 cups All purpose flour
- 1 teaspoon Baking powder
- 1 teaspoon Baking soda
- 1/2 teaspoon Salt
- 2 teaspoons Pumpkin pie spice (Or a homemade blend)
- 1/2 cup Unsalted butter, softened
- 3/4 cup Brown sugar
- 1/2 cup Granulated sugar
- 1 large Egg yolk
- 1 teaspoon Vanilla extract
- 1 cup Pumpkin purée (Not pumpkin pie filling)
For the Cream Cheese Frosting
- 4 ounces Cream cheese, softened
- 1/4 cup Unsalted butter, softened
- 2 cups Powdered sugar
- 1 teaspoon Vanilla extract
- a pinch Salt
Instructions
Preparation
- Preheat your oven to 350°F (175°C).
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and pumpkin pie spice.
- In a large bowl, beat the softened butter with the brown sugar and granulated sugar until light and fluffy.
- Add the egg yolk and vanilla extract, then mix in the pumpkin purée until combined.
- Gradually add the dry ingredients to the wet ingredients and mix just until no flour streaks remain.
- Scoop the dough onto a lined baking sheet.
Baking
- Bake for 10-12 minutes, or until the tops are set but not browned.
- Cool the cookies completely before frosting.
Frosting
- In a medium bowl, beat the cream cheese and butter until smooth.
- Add the powdered sugar, vanilla extract, and a pinch of salt, and mix until combined.
- Generously frost each cooled cookie.
Notes
Cookies stay soft for several days. Use room temperature ingredients for best results. Cool cookies completely before frosting to prevent melting.
