For the Bread
- 2 cups All purpose flour
- 1 cup Brown sugar (Packed)
- 1/2 cup Oil or melted butter (Half and half can be used for a richer flavor)
- 1 cup Buttermilk (Can substitute with milk plus lemon juice)
- 2 large Eggs
- 1 teaspoon Baking powder
- 1 teaspoon Baking soda
- 1 teaspoon Salt
- 1 teaspoon Cinnamon (Plus a pinch of nutmeg (optional))
- 2 cups Peeled and chopped apples (Use firm apples like Granny Smith or Honeycrisp)
- 1/2 cup Chopped pecans (Some for the batter and some for the glaze)
For the Glaze
- 1/4 cup Butter (For melting)
- 1/2 cup Brown sugar (Packed)
- 1 tablespoon Milk or buttermilk
- 1 teaspoon Vanilla extract
- 1/2 cup Chopped toasted pecans (For the glaze)
Instructions
Preparation
- Preheat the oven to 350°F (175°C).
- Grease a 9 by 5 loaf pan and line with parchment paper for easy removal.
Mixing Dry Ingredients
- In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
Mixing Wet Ingredients
- In another bowl, combine eggs, brown sugar, oil or melted butter, vanilla extract, and buttermilk.
Combining Ingredients
- Gently stir the wet ingredients into the dry ingredients until just combined.
- Fold in the chopped apples and half of the toasted pecans.
Baking the Bread
- Pour the batter into the prepared loaf pan.
- Bake for 50 to 65 minutes, until the top is golden and a toothpick comes out with a few moist crumbs.
Making the Glaze
- In a small saucepan, melt butter over medium heat, then stir in brown sugar and milk until it bubbles.
- Remove from heat and add vanilla and chopped toasted pecans.
Finishing Touch
- Pour the warm glaze over the warm bread and allow it to soak in.
Notes
Make sure to toast the pecans for enhanced flavor. Bread can be made ahead and tastes even better the next day.
