Main Ingredients
- 1 lb smoked sausage (kielbasa or andouille) (Choose a good quality smoked sausage for best flavor.)
- 1 lb Yukon gold potatoes (Cut into small chunks or half moons.)
- 1 medium yellow onion (Sliced into strips.)
- 2 tbsp oil (For frying.)
- 1 tsp salt (To taste.)
- 1/2 tsp black pepper (To taste.)

- 1 medium bell pepper (Sliced for sweetness and color.)
- 2 cloves garlic (Minced, added towards the end.)
- 1 tsp paprika (For added flavor.)
- 2 tbsp green onions or parsley (For garnish.)

Preparation
- Slice the smoked sausage into coins about a quarter inch thick.
- Cut the potatoes into small chunks or thin half moons.
- Slice the onion into strips.
- If you have time, soak the cut potatoes in cold water for 15 to 20 minutes, then pat them dry.
Cooking
- Heat a large skillet over medium heat and add oil if the sausage is lean. Lay the sausage slices in a single layer.
- Brown the sausage without moving for a few minutes until edges are golden, then flip to brown the other side.
- Remove the sausage and leave the drippings in the pan.
- Add more oil if necessary, then add the potatoes in an even layer and season with salt and pepper.
- Let the potatoes cook without stirring for a few minutes until they develop a crust, then flip and repeat.
- Check readiness by poking with a fork; they should be tender and crispy.
- Add the onions when the potatoes are halfway tender and stir occasionally.
- When the potatoes are tender and onions are golden, return the sausage to the skillet and toss everything together.
- Cook for an additional 2 to 3 minutes to warm the sausage through and blend flavors.
Notes
For extra crispy potatoes, dry well before frying, do not overcrowd the skillet, and avoid constant stirring. Storage: Keeps well in an airtight container for up to 4 days. Reheat in a skillet with a little oil for best results.
