Ingredients

Main Ingredients

  • 4 whole artichokes (Choose fresh, tender artichokes.)
  • 8 cloves garlic (Can be roasted whole.)
  • 3 whole lemons (Cut in half for boiling and serving.)
  • 8 pinches salt (Adjust to taste.)
  • 6 tbsp olive oil (Use more if desired.)


Instructions

Preparation

  1. Preheat your oven to 400°F (200°C).
  2. Trim the artichokes by removing the tough outer leaves and cutting off the tips.
  3. Cut the lemons in half and reserve.

Cooking

  1. In a large pot, bring water to a boil and add the artichokes, garlic, salt, and halved lemons. Boil for about 15 minutes.
  2. Drain the artichokes and let them cool slightly.
  3. Drizzle olive oil over the artichokes and season with additional salt if desired.
  4. Place the artichokes on a baking sheet and roast in the oven for about 30-40 minutes, until they are tender and golden brown.
  5. Serve warm, using the remaining lemon juice for added flavor.

Notes

Cool leftovers to room temperature and store in an airtight container in the fridge for up to 3 days. Reheat at 350°F until warm or use in salads cold.
