Preparation
- Preheat oven to 275°F (135°C).
- Trim the fat cap of the brisket to about 1/4 inch and pat dry.
- Rub the brisket with a thin layer of oil or yellow mustard.
- Generously coat the brisket with the dry rub on all sides.
Cooking
- Place the seasoned brisket in a roasting pan, fat side up.
- Add 1 to 2 cups of beef broth, water, or coffee to the bottom of the pan.
- Cover the pan tightly with foil or a lid.
- Bake for 4 to 10 hours depending on the size of the brisket.
- Uncover during the last 20 to 40 minutes for a deeper bark if desired.
- Check for tenderness using a probe; it should slide in with minimal resistance.
- Rest the brisket covered for 30 to 60 minutes before slicing.
Serving
- Slice against the grain for tender pieces.
