Description

For the chicken

  • 4 pieces Chicken breasts or thighs (Boneless and skinless for best results.)
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 1 tsp Garlic powder (Alternatively, use fresh garlic.)
  • 2 tbsp Oil or butter (For the pan.)

For the sauce

  • 1 medium Onion, thinly sliced (Yellow onions recommended for sweetness.)
  • 1 cup Chicken broth or stock
  • 1 cup Sour cream (Full-fat sour cream is preferred.)
  • 1 tbsp Flour or cornstarch (Optional, for a thicker sauce.)
  • 1 tbsp Dried chives or green onions (Optional for garnish.)
  • 1 pinch Paprika (Optional for warmth.)

Instructions

Preparation

  1. Slice the chicken breasts horizontally into cutlets for quicker cooking.
  2. Season both sides with salt, pepper, and garlic powder.
  3. Heat oil and butter in a large skillet over medium-high heat.

Cooking the Chicken

  1. Add chicken cutlets to the skillet and cook without moving for about 5 minutes until browned.
  2. Flip the chicken, cook until done, and remove from the skillet.

Cooking the Onions

  1. Lower heat to medium and add sliced onions to the skillet.
  2. Stir and scrape browned bits. Cook until onions are soft and golden, about 8 to 12 minutes.

Making the Sauce

  1. Pour in chicken broth and let it bubble for a minute to loosen stuck bits.
  2. Reduce heat to low and stir in sour cream gradually until smooth.
  3. Return chicken to the skillet, allow to warm in the sauce for a couple of minutes.

Notes

Serve with mashed potatoes, rice, or a simple salad to catch the sauce. Great for meal prep; leftovers can be reheated gently with a splash of broth.
