  • 4 pieces boneless skinless chicken breasts or thighs (Thighs stay juicy and are harder to overcook.)
  • 1 tsp salt (Simple seasoning.)
  • 1 tsp black pepper (Simple seasoning.)
  • 1 tsp Italian seasoning (Optional for classic flavor.)
  • 2 tbsp olive oil (For browning the chicken.)
  • 2 tbsp butter (Adds richness to the sauce.)
  • 3 cloves garlic (Fresh is best, but jarred works too.)
  • 1 cup chicken broth (Loosens the sauce and adds depth.)
  • 1 cup heavy cream (For creamy texture.)
  • 1 cup Parmesan cheese (Freshly grated melts smoother.)
  • 1/2 cup sun-dried tomatoes (Packed in oil for extra flavor.)
  • 4 cups fresh baby spinach (Wilts quickly.)


Instructions

Preparation

  1. Season the chicken on both sides with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a large skillet, then sear the chicken until golden on both sides.
  3. Remove chicken to a plate. Add butter and garlic to the same pan and stir for about 30 seconds.
  4. Pour in chicken broth and scrape up the browned bits.
  5. Add heavy cream and Parmesan, stirring until the sauce looks smooth.
  6. Stir in sun-dried tomatoes, then add spinach and let it wilt.
  7. Put the chicken back in and simmer for a few minutes until cooked through.

Notes

Ensure to scrape the pan for flavor. Store leftovers in an airtight container for up to 3 days.
