- 1 tsp Italian seasoning (Optional for classic flavor.)
- 2 tbsp olive oil (For browning the chicken.)
- 2 tbsp butter (Adds richness to the sauce.)
- 3 cloves garlic (Fresh is best, but jarred works too.)
- 1 cup chicken broth (Loosens the sauce and adds depth.)
- 1 cup heavy cream (For creamy texture.)
- 1 cup Parmesan cheese (Freshly grated melts smoother.)
- 1/2 cup sun-dried tomatoes (Packed in oil for extra flavor.)
- 4 cups fresh baby spinach (Wilts quickly.)

Preparation
- Season the chicken on both sides with salt, pepper, and Italian seasoning.
- Heat olive oil in a large skillet, then sear the chicken until golden on both sides.
- Remove chicken to a plate. Add butter and garlic to the same pan and stir for about 30 seconds.
- Pour in chicken broth and scrape up the browned bits.
- Add heavy cream and Parmesan, stirring until the sauce looks smooth.
- Stir in sun-dried tomatoes, then add spinach and let it wilt.
- Put the chicken back in and simmer for a few minutes until cooked through.
Notes
Ensure to scrape the pan for flavor. Store leftovers in an airtight container for up to 3 days.
