- 4 pounds ripe nectarines, pitted and chopped (skins on is fine)
- 1 to 3 cups sugar (start lower, adjust later)
- 2 tablespoons lemon juice
- 1 teaspoon ground cinnamon
- 1 to 2 pinches salt
- Optional: 1 tiny pinch ground nutmeg or ground ginger
- Optional: 1 teaspoon vanilla extract added at the end
Instructions
- Chop the nectarines and toss them into a big heavy pot.
- Add lemon juice, sugar (start with less), cinnamon, and salt.
- Bring it to a gentle simmer, then lower the heat so it does not scorch.
- Stir often, especially as it thickens. Think slow and steady.
- Blend to your preferred texture, then keep cooking until it is thick and glossy.
- Taste and adjust. More sugar, another pinch of salt, or a tiny extra dusting of spice if it needs it.
- Spoon into jars and cool.
Notes
This fruit butter lasts 2-3 weeks in the fridge and can be frozen for up to 6 months.
