  • 12-16 ounces Mushrooms, sliced (Cremini preferred for deeper flavor)
  • 3-4 tablespoons Butter or oil (Butter adds creaminess)
  • 1 medium Onion or shallot, finely chopped (Adds sweetness)
  • 2-3 cl tablespoons Flour (For thickening)
  • 2-2.5 cups Broth (beef, chicken, or veggie) (Choose based on desired richness)
  • 1/4-1/2 cup Cream or milk (Cream creates a richer gravy)
  • to taste none Salt and black pepper (Season to personal preference)
  • to taste none Thyme (fresh or dried) (Optional seasoning for aroma)

Instructions

Preparation

  1. Brown the mushrooms in butter until they are deeply golden.
  2. Add onion or shallot, and cook until soft.
  3. Add garlic, and cook for about 30 seconds.
  4. Sprinkle flour over everything, and stir for 1 minute to cook out the raw flour taste.
  5. Slowly pour in broth while stirring to ensure it stays smooth.
  6. Simmer for a few minutes until the gravy thickens.
  7. Stir in cream, taste, and adjust salt and pepper as needed.

Notes

For gluten-free, substitute flour with cornstarch slurry. Add wine or pan drippings for extra flavor. Can be made ahead and reheated.
