Description

Crispy, cheesy, and bacon-packed bites made from leftover mashed potatoes, perfect as a snack or appetizer.

Ingredients

Bite Ingredients

  • 2 cups cold mashed potatoes (Cold mashed potatoes hold shape better.)
  • 4 strips bacon, cooked and crumbled (Drain well to avoid excess grease.)
  • 1 cup sharp cheddar cheese, shredded (Sharp cheddar provides the most flavor.)
  • 2 tablespoons green onions or chives (Optional, but adds flavor.)
  • 1 large egg (Helps bind the mixture together.)
  • 1 cup flour or breadcrumbs (Use more if mashed potatoes are too loose.)
  • to taste teaspoon salt (Adjust according to preference.)
  • to taste teaspoon pepper (Adjust according to preference.)
  • 1 teaspoon garlic powder or onion powder (Optional seasoning.)
  • oil spray oil for crisping (A light spray helps browning.)

Instructions

Preparation

  1. In a mixing bowl, combine cold mashed potatoes, egg, shredded cheddar, crumbled bacon, and any optional ingredients like green onions.
  2. Gradually add flour or breadcrumbs until the mixture is scoopable and holds its shape.
  3. Shape the mixture into small balls or slightly flattened nuggets, approximately 1.5 inches wide.
  4. Chill the formed bites for 10-15 minutes to make them easier to handle.

Cooking

  1. For air frying: Preheat air fryer to 375°F. Spray the bites lightly with oil and place in a single layer. Air fry for 10-12 minutes, flipping halfway.
  2. For baking: Preheat the oven to 400°F. Line a baking sheet with parchment paper. Spray the bites with oil and bake for 20-25 minutes, flipping once halfway through.
  3. For extra crispiness, broil for 1-2 minutes at the end of baking, watching closely to prevent burning.

Notes

These bites are versatile and can be made ahead of time. They can be stored in the fridge for up to 3 days or frozen for up to 2 months. Reheat in the air fryer or oven to retain crispiness.
