  • 1 pound ground beef (Can substitute with ground Italian sausage, turkey, or vegetarian options.)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste (For added richness.)
  • 4 cups beef broth (Can use chicken broth.)
  • 1 jar marinara sauce (Choose your favorite.)
  • 1 teaspoon Italian seasoning
  • 1 teaspoon basil
  • 1/4 teaspoon red pepper flakes (Optional for heat.)
  • 8 ounces lasagna noodles (Broken into bite-size pieces.)
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated

Instructions

Cooking

  1. Brown the ground beef in a big pot over medium heat. Drain excess grease if there is a lot.
  2. Add chopped onion and cook for 3 to 4 minutes until it softens. Stir in garlic for about 30 seconds.
  3. Stir in tomato paste and let it cook for 1 minute.
  4. Pour in marinara sauce and beef broth. Add Italian seasoning, salt, pepper, and red pepper flakes.
  5. Bring to a gentle boil, then add the broken lasagna noodles. Reduce to a simmer and cook until noodles are just tender, stirring occasionally.
  6. Ladle into bowls and top with a spoonful of ricotta, a handful of mozzarella, and a shower of Parmesan.
  7. Let it sit for a minute to allow the cheese to melt.

Notes

For leftovers, store the noodles separately to prevent them from getting mushy. The soup tastes even better the next day.
