Description

A creamy, crunchy, and a little spicy grilled cheese sandwich inspired by jalapeno poppers, perfect for a cozy meal or snack.


Ingredients

For the jalapeno popper filling

  • 4 oz Cream cheese, softened
  • 2 Roasted or fresh jalapenos, chopped small (Adjust based on spice preference.)
  • 1 cup Shredded cheddar or a cheddar blend
  • 1 tsp Garlic powder (Or a tiny bit of fresh garlic.)
  • to taste Salt and black pepper
  • 4 strips Cooked bacon, chopped (Save some strips for layering.)

For assembling the sandwich

  • 4 slices Bread (sourdough, white, or Texas toast) (Choose sturdy bread.)
  • 4 slices Cheese (cheddar for flavor and mozzarella or Monterey Jack for melt)
  • 2 tbsp Butter (For spreading on bread.)

Instructions

Preparation

  1. Cook bacon until crisp, then chop it and set aside.
  2. Mix cream cheese, chopped jalapenos, shredded cheddar, garlic powder, seasonings, and some of the bacon in a bowl until well combined.
  3. Butter one side of each bread slice.

Assembly and Cooking

  1. Build the sandwich: Place one slice of bread (butter side out) in the skillet, add a cheese slice, add jalapeno cream cheese filling, more bacon, another cheese slice, and top with another slice of bread.
  2. Cook in a skillet over medium low to medium heat until the bread is golden brown, then flip and repeat.
  3. Cover the pan for a minute or two to help the cheese melt.

Notes

Serve with tomato soup or a simple salad. Leftovers can be stored in the fridge for up to 2 days. Reheat in a skillet for best results.
