Preparation
- Brown the sausage in a large pot over medium heat, breaking it up as it cooks.
- Once browned, spoon off excess grease if necessary.
- Add the diced onion and cook for 3 to 4 minutes until softened.
- Add minced garlic and cook for about 30 seconds until fragrant.
Cooking
- Pour in crushed tomatoes and chicken broth.
- Add Italian seasoning, and taste the broth to adjust salt and pepper as needed.
- Bring the mixture to a gentle simmer for about 10 minutes.
- Add the cheese tortellini and cook just until tender, usually 3 to 5 minutes for refrigerated tortellini.
- Stir in spinach or kale if using, then turn off the heat.
- Serve with freshly grated Parmesan cheese on top.
