A creamy, warmly spiced vegetarian dish that celebrates cauliflower, inspired by the classic butter chicken recipe, perfect for a cozy weeknight dinner.

Main Ingredients

  • 1 large head Cauliflower, cut into florets
  • 2 to 3 tablespoons Butter or oil (Use oil for a vegan option)
  • 1 medium Onion, finely chopped
  • 3 to 4 cloves Garlic, minced
  • 1 tablespoon Ginger, grated or minced
  • 1 to 1.5 cups Tomato puree or crushed tomatoes
  • 1/2 cup Heavy cream (Can substitute with coconut milk for a dairy-free version)
  • 1 to 2 teaspoons Garam masala
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1/2 to 1 teaspoon Kashmiri chili powder or mild chili powder
  • to taste Salt
  • 1 teaspoon Sugar or honey (optional) (Helps balance tomatoes)
  • optional Kasuri methi dried fenugreek leaves (Adds aroma)
  • splash Water (As needed to loosen sauce)

Instructions

Preparation

  1. Cut cauliflower into medium florets, rinse quickly, and dry well. Optionally roast or pan sear until lightly golden and tender.

Making the Sauce

  1. Melt butter in a pan over medium heat.
  2. Add onion with a pinch of salt, and cook until soft and slightly golden.
  3. Add garlic and ginger, and cook for about 30 seconds.
  4. Stir in cumin, coriander, chili powder, and garam masala. Let spices toast briefly.
  5. Pour in the tomato puree. Stir and let it simmer for 8 to 12 minutes.
  6. Add sugar if needed, adjusting for tanginess.
  7. Lower heat and stir in cream. Add a splash of water if too thick.
  8. If using kasuri methi, crush and add it towards the end.

Combining

  1. Add roasted cauliflower to the pan and gently stir to coat.
  2. Let everything simmer together for 3 to 5 minutes for the cauliflower to absorb flavor.
  3. Taste and adjust salt, spice, or add more butter for richness.

Notes

Serve with steamed basmati rice, naan, or a fresh cucumber salad. Perfect for leftovers: use in wraps or over toast.
