Ingredients
For the brine
- 1 cup vinegar (Distilled white vinegar, apple cider vinegar, or red wine vinegar can be used.)
- 1 cup warm water (Warm water helps dissolve salt and sugar.)
- 1 tablespoon salt (Regular salt works well.)
- 1 to 2 tablespoons sugar (Optional, but recommended for balancing flavor.)
For the pickled onions
- 1 large red onion (Thinly sliced.)
Optional flavor additions
- peppercorns (For added spiciness.)
- garlic (Add 1 smashed clove.)
- chili flakes (For a spicy kick.)
- bay leaf (For herbal flavor.)
Instructions
Preparation
- Slice the red onion thinly and pack it into a clean jar or container with a lid.
- In a measuring cup or bowl, stir together vinegar, warm water, salt, and sugar until dissolved.
- Pour the brine over the onions until they are fully covered. Press them down if they float.
- Let sit at room temp for 15 to 30 minutes before moving to the fridge.
Storage
- Store in a clean glass jar with a lid in the fridge.
- They usually last about 2 weeks, but check for smell and taste before using.
Notes
Customize with various vinegars or flavor additions. For a milder flavor, let them sit longer after refrigeration.
