A quick and customizable weeknight meal that’s sweet, tangy, and filling, perfect for busy evenings.


Ingredients

Main Ingredients

  • 1 lb boneless skinless chicken breasts or thighs
  • 1/4 cup honey (for sweetness and a light glaze)
  • 1 large lime (zest and juice for that fresh kick)
  • 2 cloves garlic (fresh or jarred)
  • 2 tbsp soy sauce (or coconut aminos)
  • 2 tbsp olive oil (for cooking)
  • 1 cup jasmine rice (or brown rice, or whatever you have)
  • 1 ripe avocado (ripe but not mushy)

Optional Toppings

  • 1 cup black beans
  • 1 cup corn
  • 1 cup diced tomatoes
  • 1/4 cup cilantro (chopped)
  • 2 stalks green onion (sliced)
  • 1 cup shredded lettuce

Seasonings

  • 1 pinch salt
  • 1 pinch pepper
  • 1 tsp chili powder or smoked paprika (optional for smokiness)


Instructions

Preparation

  1. Start your rice. Cook it according to the package instructions.
  2. In a small bowl, mix honey, lime zest, lime juice, soy sauce, garlic, a pinch of salt, and a little pepper to make the honey lime sauce.

Cooking

  1. Heat olive oil in a skillet over medium heat. Add chicken cut into bite-sized pieces or thin strips, and season with salt and chili powder if using.
  2. When chicken is cooked through, pour in the honey lime mixture. Let it bubble for a minute or two until glossy and coats the chicken.

Assembly

  1. In bowls, add a base of rice, followed by the honey lime chicken, sliced avocado, and any additional toppings you desire.

Notes

To prevent avocado from browning, squeeze lime juice over it before serving. Customize toppings based on family preferences for a more enjoyable meal.
