Description
A cozy, filling one-pan meal featuring roasted sweet potatoes, crispy broccoli, and caramelized honey garlic sausage.
Ingredients
Main Ingredients
- 1 lb fully cooked smoked sausage or kielbasa
- 2 medium sweet potatoes (peeled if desired)
- 4 cups broccoli florets (fresh is ideal, frozen can work)
For the Sauce
- 1/4 cup honey (the star of the sauce)
- 3 tbsp soy sauce (use low sodium if possible)
- 2 cloves garlic, minced (fresh is best, but garlic powder works too)
- 1 tbsp apple cider vinegar or lemon juice (just a splash to brighten the sauce)
- 1/4 tsp red pepper flakes (optional for heat)
Additional Ingredients
- 2 tbsp olive oil (for roasting)
- to taste salt and pepper (keep it simple)
Instructions
Preparation
- Preheat your oven to 425°F (220°C). Line a large sheet pan with parchment paper or foil.
- Toss the diced sweet potatoes with olive oil, salt, and pepper. Spread them out in a single layer.
Roasting
- Roast the sweet potatoes for about 15 minutes.
- While the sweet potatoes roast, slice the sausage into coins or half moons.
- Add the sausage and broccoli to the pan, drizzle with a bit more olive oil, and toss everything together. Roast for another 12 to 15 minutes.
Making the Sauce
- In a bowl, mix together honey, soy sauce, minced garlic, and a splash of vinegar or lemon juice. Optionally warm for 20 seconds in the microwave to make it pourable.
Final Steps
- Once the veggies and sausage are cooked, drizzle the sauce over everything on the pan and toss gently.
- Put the pan back in the oven for an additional 2 to 4 minutes.
Notes
Do not overcrowd the pan to ensure roasting rather than steaming. For a spicier dish, add red pepper flakes or sriracha. Leftovers hold well for up to 4 days.
