  • 1 cup long grain white rice (This type of rice is recommended for best results.)
  • 1/2 cup BBQ sauce (Use your favorite smoky style.)
  • 2 tbsp honey (Adjust if BBQ sauce is overly sweet.)
  • 2 cups chicken broth (Better flavor than water.)
  • 1 medium onion, diced
  • 2 cloves garlic, minced

  • 1 tsp smoked paprika (For extra smoky flavor.)
  • 1 tbsp apple cider vinegar (Optional for balancing sweetness.)
  • 1/4 tsp red pepper flakes (Optional for heat.)

Instructions

Preparation

  1. Heat a little oil in a large deep skillet over medium heat. Season the chicken with salt and pepper, then brown for a few minutes per side.
  2. Move the browned chicken to a plate. Add the diced onion to the skillet and cook until softened, then stir in minced garlic for about 30 seconds.

Cooking

  1. Stir in the rice to coat it with the pan juices. Pour in the chicken broth and mix the BBQ sauce and honey directly into the pan.
  2. Nestle the browned chicken (and any juices) back into the skillet on top of the rice mixture. Bring to a gentle simmer.
  3. Cover and reduce heat to low. Cook until the rice is tender and the chicken is cooked through, about 20-25 minutes. Let it rest off heat for a few minutes before fluffing.

Notes

Keep the heat low once covered to avoid burning the rice. Letting the dish rest off heat helps to finish the rice cooking.
