Description
A soft and cozy pumpkin roll filled with creamy cream cheese filling, perfect for fall desserts.
Ingredients
For the Cake
- 3 large Eggs (Use room temperature eggs for best results.)
- 1 cup Granulated sugar
- 1 cup Canned pumpkin puree (Do not use pumpkin pie filling.)
- 1 cup All purpose flour (Measure by spooning it into the cup and leveling it off.)
- 1 teaspoon Baking powder
- 1 teaspoon Baking soda
- 2 teaspoons Cinnamon (Add a pinch of nutmeg or cloves if desired.)
- 1/2 teaspoon Salt
For the Cream Cheese Filling
- 8 oz Cream cheese (Full fat is best.)
- 2 tablespoons Butter (Softened.)
- 1 cup Powdered sugar (Adjust based on desired sweetness.)
- 1 teaspoon Vanilla extract
For Dusting
- 1/2 cup Powdered sugar (For rolling the cake.)
Instructions
Preparation
- Preheat your oven to 350°F (175°C). Line a jelly roll pan (about 10 by 15 inches) with parchment paper and lightly grease it.
- In a bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and spices.
- In a separate bowl, beat the eggs and sugar until thickened and lighter in color, then stir in the pumpkin puree.
- Fold in the dry ingredients until just combined, being careful not to overmix.
- Spread the batter evenly in the prepared pan and gently tap to release air bubbles.
Baking
- Bake for 12 to 15 minutes, or until the cake springs back when lightly touched.
- While still hot, turn the cake out onto a clean towel dusted generously with powdered sugar, gently peel off the parchment paper.
- Roll the cake up in the towel from the short end and let it cool completely in this position.
Filling and Serving
- Once cooled, unroll the cake, spread the cream cheese filling evenly, and reroll without the towel.
- Wrap it tightly and chill for at least 1 hour before slicing.
- Dust with powdered sugar before serving and enjoy!
Notes
For a less sweet filling, use less powdered sugar. The pumpkin roll keeps well in the fridge for up to 4 days and can be frozen for up to 2 months.
