Ingredients
For the Sweet Potato Base
- 4 medium Sweet potatoes (1 per person usually works)
For the Filling
- 1 pound Lean ground turkey or chicken (or black beans for a meatless option)
- 1 medium Onion, diced
- 2 cloves Garlic, minced
- 2 tablespoons Taco seasoning (Store bought or homemade)
- to taste Salt and pepper
- 1 cup Salsa or diced tomatoes
- 0.5 cup Greek yogurt or sour cream for topping (Optional)
- 1 cup Shredded cheese (Optional, but highly recommended)
- to taste Chopped cilantro or green onion (Optional)
- 1 cup Corn (Optional add-in)
- 1 cup Black beans (Optional add-in)
- 1 cup Chopped spinach (Optional add-in)
- 1 small Jalapenos, chopped (Optional add-in)
Instructions
Preparation
- Bake the sweet potatoes: Preheat your oven to 400 F. Scrub the sweet potatoes, poke them a few times with a fork, and place them on a baking sheet. Bake for 40 to 55 minutes depending on size, until a knife slides in easily.
- While the potatoes bake, prepare the filling: Cook onion in a skillet with a little oil. Add garlic, then your ground meat. Season with taco seasoning, salt, and pepper. Stir in salsa or tomatoes and let it simmer for a few minutes.
Assembly
- Once the potatoes are baked, let them cool for 5 minutes. Slice each potato lengthwise and gently press the ends to open it up. Fluff the inside with a fork.
- Spoon the filling into each potato. Top with cheese if using, then return to the oven for 5 minutes to melt.
- Add toppings like Greek yogurt, cilantro, avocado, or hot sauce as desired.
Notes
You can customize the filling and toppings based on your preference. For a more hearty version post-workout, add more protein. For a lighter meal, increase the veggies and salsa.
