  • 1 cup Cottage cheese (Small curd is great but any works)

  • 2-3 tablespoons Grated parmesan (Optional but adds flavor)
  • 2 cloves Garlic, minced (Or 1 teaspoon garlic powder)
  • 1/2 teaspoon Onion powder
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1 teaspoon Smoked paprika (Optional, adds great flavor)
  • Chopped parsley or chives (Optional, for freshness)
  • Oil or cooking spray for the pan


Instructions

Preparation

  1. In a big bowl, add ground chicken, cottage cheese, egg, breadcrumbs, seasonings, and any herbs or parmesan you are using. Mix with a fork first, then use your hands. It should look a little sticky but still hold together.
  2. Let it sit for 3 minutes to help the breadcrumbs absorb moisture for easier shaping.
  3. Shape the mixture into 6 to 8 patties depending on your preferred size, pressing them to an even thickness.

Cooking
