Ingredients

Main ingredients

  • 4 cups Cooked chicken breast, chopped or shredded (Can use thighs for a richer flavor.)
  • 1 cup Plain nonfat Greek yogurt (Base for the dressing.)
  • 1 cup Celery, diced small (For crunch.)
  • 1/2 cup Green onion or red onion, thin sliced
  • 2 tablespoons Dill (fresh or dried) (Fresh is recommended.)
  • 2 tablespoons Parsley or chives (optional)
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1 tablespoon Lemon juice (For a tangy flavor.)

Optional add ins

  • 1 cup Diced cucumber (For extra crunch.)
  • 1/2 cup Pickles, diced (Tiny dice recommended.)
  • 1/2 cup Chopped turkey bacon or real bacon (Adjust according to dietary goals.)


Instructions

Preparation

  1. Chop or shred your cooked chicken into bite-size pieces.
  2. Dice celery and slice green onion.
  3. Mix the Greek yogurt ranch dressing in a large bowl.
  4. Add chicken and veggies to the bowl and stir until everything is coated.
  5. Taste and adjust salt, pepper, dill, and lemon.
  6. Chill for 15 to 30 minutes if you have time. It gets better after it sits a bit.

Notes

For meal prep, store the salad in airtight containers. Pack crunchy add-ons separately to maintain texture. Use cooled chicken to prevent the dressing from melting.
