This one-pan Ground Turkey Sweet Potato Skillet is a quick, healthy, and filling dinner option that is easy to prepare and clean up, making it perfect for busy weeknights.
Ingredients
Main Ingredients
- 1 lb Ground turkey (Lean turkey works best)
- 2 medium Sweet potatoes, diced small
- 1 medium Yellow onion, chopped (Can substitute with red onion)
- 1 medium Bell pepper, chopped (Any color)
- 2-4 cloves Garlic, minced (To taste)
- 2 tbsp Olive oil or avocado oil
Seasonings
- 1 tsp Paprika
- 1 tsp Cumin
- 1 tsp Chili powder
- 1 tsp Salt (To taste)
- 1 tsp Black pepper (To taste)
Optional Add-Ins
- 2 cups Baby spinach (Optional)
- 1 can Black beans, drained and rinsed (Optional)
- 1 cup Corn, frozen or canned (Optional)
- 1 lb Avocado, sliced (For serving)
- 1/2 cup Greek yogurt, for topping (Optional)
- 1/4 cup Chopped cilantro, for topping (Optional)
- 1 squeeze Lime juice, for flavor (Optional)
Instructions
Preparation
- Dice the sweet potatoes into small cubes, about the size of a thumbnail, chop the onion and bell pepper, and mince the garlic.
Cooking
- Heat a big skillet over medium heat and add a little oil.
- Toss in the sweet potatoes with a pinch of salt. Cook for about 8-10 minutes, stirring occasionally.
- If sweet potatoes look dry, add 2-3 tablespoons of broth or water and cover to help soften.
- Push the sweet potatoes to one side and add ground turkey to the empty space. Break it up with a spoon and brown it.
- Add onion and bell pepper, then stir everything together once the turkey is mostly cooked.
- Add garlic, paprika, cumin, chili powder, black pepper, and a bit more salt. Cook for 2-3 minutes.
- If using spinach, add it at the end and let it wilt before serving.
Serving
- Top with avocado, Greek yogurt, cilantro, or lime juice as desired.
- Serve hot, straight from the pan.
Notes
Great as leftovers, can be stored in an airtight container for up to 4 days in the fridge or frozen for up to 2 months. Feel free to customize with available veggies or spices.
