Ingredients
Main Ingredients
- 1 pound ground beef (80-90% lean)
- 1 cup long grain white rice (uncooked)
- 1 large onion (diced)
- 2-3 cloves garlic (minced) or 1 teaspoon garlic powder
- 2 cups beef broth (Helps the rice cook with more flavor than water)
- 1 can cream of mushroom or cream of chicken soup (Classic shortcut for creaminess)
- 1 cup tomato sauce or diced tomatoes (optional) (For a little tang)
Seasonings and Cheese
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon paprika
- 1 teaspoon Italian seasoning or taco seasoning
- 1-2 cups cheddar cheese (shredded) (Can substitute with a blend)
Optional Add-ins
- 1 cup frozen peas
- 1 cup corn
- 1 cup chopped spinach
- 1 medium bell pepper (chopped)
Instructions
Preparation
- Preheat your oven to 375°F and lightly grease a 9×13 baking dish.
- In a large skillet, cook the ground beef and diced onion until the beef is no longer pink. Drain off excess grease if necessary.
- Add garlic and cook for about 30 seconds.
- Stir in the uncooked rice, beef broth, condensed soup, and your seasonings. Add tomato sauce or diced tomatoes if you are using them.
- Pour the mixture into the baking dish and spread it out evenly. Cover tightly with foil.
Baking
- Bake for about 40 to 50 minutes, until the rice is tender. Start checking around 40 minutes.
- Remove the foil, sprinkle cheese all over the top, and bake uncovered for an additional 8 to 10 minutes until melted.
- Optionally, broil for 1 to 2 minutes to add color, but watch it closely.
Notes
Let it rest for 5 to 10 minutes to help everything settle. You can also make this in two different ways: a one-pot method or the dump-and-bake method for convenience.
