Description

A comforting and easy weeknight meal with tender rice, savory beef, and a cheesy top that the whole family will love.


Ingredients

Main Ingredients

  • 1 pound ground beef (80-90% lean)
  • 1 cup long grain white rice (uncooked)
  • 1 large onion (diced)
  • 2-3 cloves garlic (minced) or 1 teaspoon garlic powder
  • 2 cups beef broth (Helps the rice cook with more flavor than water)
  • 1 can cream of mushroom or cream of chicken soup (Classic shortcut for creaminess)
  • 1 cup tomato sauce or diced tomatoes (optional) (For a little tang)

Seasonings and Cheese

  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning or taco seasoning
  • 1-2 cups cheddar cheese (shredded) (Can substitute with a blend)

Optional Add-ins

  • 1 cup frozen peas
  • 1 cup corn
  • 1 cup chopped spinach
  • 1 medium bell pepper (chopped)


Instructions

Preparation

  1. Preheat your oven to 375°F and lightly grease a 9×13 baking dish.
  2. In a large skillet, cook the ground beef and diced onion until the beef is no longer pink. Drain off excess grease if necessary.
  3. Add garlic and cook for about 30 seconds.
  4. Stir in the uncooked rice, beef broth, condensed soup, and your seasonings. Add tomato sauce or diced tomatoes if you are using them.
  5. Pour the mixture into the baking dish and spread it out evenly. Cover tightly with foil.

Baking

  1. Bake for about 40 to 50 minutes, until the rice is tender. Start checking around 40 minutes.
  2. Remove the foil, sprinkle cheese all over the top, and bake uncovered for an additional 8 to 10 minutes until melted.
  3. Optionally, broil for 1 to 2 minutes to add color, but watch it closely.

Notes

Let it rest for 5 to 10 minutes to help everything settle. You can also make this in two different ways: a one-pot method or the dump-and-bake method for convenience.
