Description

A quick, delicious recipe for grilled sea bass topped with rich lemon herb butter, perfect for weeknight dinners.


Ingredients

For the Fish

  • 2 pieces Sea bass fillets (about 6 ounces each, skin on if possible)
  • to taste Salt and black pepper
  • 1 tablespoon Olive oil (for brushing)

For the Herb Butter

  • 4 tablespoons Butter (unsalted is best) (Soften before use)
  • 2 cloves Garlic (fresh minced)
  • 1 tablespoon Lemon (zest plus juice)
  • 2 tablespoons Parsley (chopped) (Or any tender herbs you prefer)
  • 2 tablespoons Dill (chopped)
  • a pinch Red pepper flakes (optional)


Instructions

Preparation

  1. Preheat your grill to medium-high heat.
  2. Pat the sea bass fillets dry and season with salt and black pepper.
  3. Brush the grill grates with oil to prevent sticking.

Grilling

  1. Place the fillets on the grill skin side down, close the lid, and let cook undisturbed for about 3-5 minutes.
  2. Carefully flip the fillets and cook for an additional 3-5 minutes until the fish is opaque and flakes easily.

Making the Herb Butter

  1. In a bowl, mix softened butter with minced garlic, lemon zest, lemon juice, chopped parsley, chopped dill, and a pinch of salt and pepper.
  2. Taste and adjust seasoning as needed.

Serving

  1. Top the grilled sea bass with a spoonful of lemon herb butter and let it melt.

Notes

This recipe pairs well with sides like grilled asparagus or a cucumber salad. Leftovers can be stored in an airtight container in the fridge for up to 2 days.
