  • 1.5 cups Zucchini, grated (about 1 and 1/2 cups packed) (Squeeze out excess moisture)
  • 3-4 pieces Green onions, sliced (about 3 to 4, depending on size)
  • 1 cup Sharp cheddar cheese, shredded (plus a little for the top if desired) (Use sharp for better flavor)
  • 2 cups All purpose flour
  • 2 teaspoons Baking powder
  • 0.5 teaspoon Baking soda
  • 0.75 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder (optional) (Adds extra flavor)
  • 2 pieces Eggs
  • 0.75 cups Milk or buttermilk
  • 0.33 cups Oil or melted butter (Use olive oil for a lighter option)
  • 0.33 cups Plain Greek yogurt or sour cream (For tenderness)


Instructions

Preparation

  1. Heat the oven to 350°F (175°C). Grease your loaf pan or line it with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, black pepper, and garlic powder.
  3. In a separate bowl, whisk the eggs, milk or buttermilk, oil or melted butter, and Greek yogurt or sour cream.
  4. Stir the squeezed zucchini, sliced green onions, and shredded cheddar into the wet ingredients.
  5. Gently pour the wet mixture into the dry ingredients and stir until just combined. Do not overmix.
  6. Pour the batter into the prepared loaf pan. Sprinkle additional cheddar on top if desired.

Baking

  1. Bake in the preheated oven for 45 to 55 minutes, or until a toothpick inserted into the center comes out clean or with a few crumbs.
  2. Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
