- 1 tablespoon dill (Fresh, for flavor.)
For the bowls
- 2 cups base (rice, quinoa, or chopped romaine) (Customize as desired.)
- 1 cup cucumber, diced
- 1 cup tomatoes, diced
- 1/2 cup red onion, sliced (Soak in cold water for a milder flavor.)
- 1 cup bell pepper, diced
- 1/2 cup kalamata olives (Optional.)
- 1/2 cup feta cheese, crumbled (Optional.)
- 1 each lemon wedges and fresh dill or parsley (For garnish.)
Instructions
Marinade
- In a bowl or zip bag, mix olive oil, lemon juice, minced garlic, dried oregano, salt, pepper, and paprika.
- Add chicken to the marinade and ensure it is well coated.
- Let marinate for 30 minutes to overnight for best flavor.
Cook Chicken
- Cook chicken in an air fryer or skillet, ensuring it reaches an internal temperature of 165°F.
- Let the chicken rest for a few minutes before slicing.
Prepare Tzatziki
- In a bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, olive oil, salt, and dill.
- Squeeze the grated cucumber to remove excess water before mixing.
Assemble Bowls
- Start with your base (rice, quinoa, or chopped romaine) in a bowl.
