Main Ingredients
- 4 pieces boneless chicken breasts (Choose pieces that are similar in size for even cooking.)
- 4 oz plain goat cheese (Use soft goat cheese for easy mixing.)
- 1/2 cup chopped pepperoncini (Chop finely for even distribution in the filling.)
- 1 tbsp fresh thyme (Can substitute with dried thyme (1 tsp).)
- 2 tbsp olive oil (Used for searing the chicken.)
- to taste salt and pepper (Essential for enhancing flavor.)
Instructions
Preparation
- Preheat your oven to 400°F (200°C).
- Using a sharp knife, slice into the thick side of each chicken breast to create a pocket.
- In a bowl, mix the goat cheese, chopped pepperoncini, fresh thyme, and a pinch of salt and pepper.
- Stuff the goat cheese mixture into each chicken breast pocket without overfilling.
Cooking
- In a skillet, heat the olive oil over medium to medium-high heat.
- Sear the chicken breasts for about 4-5 minutes on each side until golden brown.
- Transfer the skillet to the preheated oven and bake for an additional 15-20 minutes or until the internal temperature reaches 165°F (75°C).
- Let the chicken rest for 5 minutes before slicing.
Notes
For extra flavor, spoon some pan oil over the chicken before baking. This dish pairs well with roasted potatoes, a simple green salad, or steamed vegetables.
