Instructions

Preparation

  1. Cook the bacon until crisp in a large pot, then move it to a plate, leaving a couple tablespoons of bacon fat in the pot.
  2. Add the chopped onion and diced carrots to the pot. Cook until they soften and start to smell sweet.
  3. Add minced garlic and seasonings, stirring for about 30 seconds until fragrant.
  4. Pour in the chicken broth and bring to a gentle simmer.
  5. Add the potato gnocchi and cook just until they float and feel tender.
  6. Turn the heat down low, stir in the heavy cream, and then slowly add the shredded cheddar while stirring continuously until melted.
  7. Taste and adjust salt and pepper, then stir in most of the crispy bacon, reserving some for topping.

Serving

  1. Serve hot, optionally topping with additional cheddar and crispy bacon.

Notes
