Description

Ingredients

Main Ingredients

  • 2 cups All-purpose flour
  • 1 teaspoon Baking powder
  • 1 teaspoon Baking soda
  • 1/2 teaspoon Salt
  • 1 cup Granulated sugar
  • 2 large Eggs
  • 1/2 cup Oil (canola or vegetable) (Or melted butter)
  • 1/2 cup Sour cream or plain yogurt (For extra moisture)
  • 1 teaspoon Vanilla extract
  • 1 cup Fresh strawberries, diced (Use ripe strawberries)
  • 1 teaspoon Lemon zest (optional) (For brightness)

For the Glaze

  • 1 cup Powdered sugar
  • 1-2 tablespoons Milk or lemon juice (To adjust consistency)
  • 1 teaspoon Vanilla extract


Instructions

Preparation

  1. Preheat the oven to 350°F (175°C). Line your loaf pan with parchment paper and lightly grease it.

Mix Dry Ingredients

  1. In a bowl, whisk together the flour, baking powder, baking soda, and salt.

Mix Wet Ingredients

  1. In a larger bowl, whisk the sugar, eggs, oil (or melted butter), sour cream (or yogurt), and vanilla extract until smooth.

Combine Ingredients

  1. Add the dry ingredients into the wet ingredients and stir just until you do not see dry flour anymore. Do not overmix.

Fold in Strawberries

  1. Gently fold in the diced strawberries (and lemon zest if using). Pour the mixture into the loaf pan and smooth the top.

Bake

  1. Bake for about 50 to 65 minutes, depending on your pan and oven. If the top browns too fast, loosely tent it with foil for the last 10 to 15 minutes.

Cool

  1. Let the loaf cool in the pan for 15 minutes, then lift it out and cool fully on a rack before glazing.

Prepare the Glaze

  1. In a bowl, whisk together powdered sugar, milk (or lemon juice), and vanilla until smooth. Adjust the consistency as needed.
  2. Drizzle over the fully cooled loaf and let it set for 10 to 15 minutes before slicing.

Notes

For the best results, ensure berries are dry and diced small. Let the loaf cool completely before glazing. Variations include adding white chocolate chips or cream cheese swirls.
