- 1.5 to 2 pounds chicken (breasts or thighs)
- 1 pound baby potatoes or Yukon gold potatoes
- 4 cloves garlic (minced)
- 1 cup grated Parmesan cheese
- 2 tablespoons olive oil or melted butter
- 2 teaspoons Italian seasoning
- 1 teaspoon paprika (optional)
- Salt, to taste
- Black pepper, to taste
- Fresh parsley or basil for topping (optional)
- Lemon wedges (optional)
Instructions
- Preheat the oven to 400°F.
- Line a sheet pan with parchment paper or foil for easy cleanup.
- Cut the potatoes in half or quarters, depending on their size.
- Toss potatoes in a big bowl with olive oil, minced garlic, Italian seasoning, salt, pepper, and a handful of Parmesan.
- Spread the potatoes onto the pan, leaving space in the middle for the chicken.
- Season the chicken with olive oil or melted butter, garlic, salt, pepper, and a little Parmesan.
- Add the chicken to the pan and roast for about 25 to 35 minutes, depending on the cut and thickness of the chicken.
- Sprinkle a bit more Parmesan over everything in the last 5 minutes and let it melt and brown.
- Top with chopped parsley and a squeeze of lemon before serving.
Notes
For extra crispy potatoes, ensure they are dry before seasoning and avoid overcrowding the pan.
