Description

A simple, cozy dinner of juicy chicken and crispy potatoes flavored with garlic and Parmesan, all made on one pan for easy cleanup.


Ingredients

  • 1.5 to 2 pounds chicken (breasts or thighs)
  • 1 pound baby potatoes or Yukon gold potatoes
  • 4 cloves garlic (minced)
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil or melted butter
  • 2 teaspoons Italian seasoning
  • 1 teaspoon paprika (optional)
  • Salt, to taste
  • Black pepper, to taste
  • Fresh parsley or basil for topping (optional)
  • Lemon wedges (optional)

Instructions

  1. Preheat the oven to 400°F.
  2. Line a sheet pan with parchment paper or foil for easy cleanup.
  3. Cut the potatoes in half or quarters, depending on their size.
  4. Toss potatoes in a big bowl with olive oil, minced garlic, Italian seasoning, salt, pepper, and a handful of Parmesan.
  5. Spread the potatoes onto the pan, leaving space in the middle for the chicken.
  6. Season the chicken with olive oil or melted butter, garlic, salt, pepper, and a little Parmesan.
  7. Add the chicken to the pan and roast for about 25 to 35 minutes, depending on the cut and thickness of the chicken.
  8. Sprinkle a bit more Parmesan over everything in the last 5 minutes and let it melt and brown.
  9. Top with chopped parsley and a squeeze of lemon before serving.

Notes

For extra crispy potatoes, ensure they are dry before seasoning and avoid overcrowding the pan.
