Cooking Fat

  • 2 tablespoons Olive oil
  • 1 tablespoon Butter

Sauce Ingredients

  • 4 cloves Fresh garlic, minced
  • 1 cup Chicken broth
  • 1 cup Heavy cream (or alternatives like half and half or Greek yogurt)
  • 1 cup Parmesan cheese, freshly grated (for best texture)
  • 1 teaspoon Italian seasoning (or a mix of dried herbs)
  • 1 handful Spinach (optional)
  • 1 cup Mushrooms, sliced (optional)
  • 1 squeeze Lemon (optional)

Instructions

Preparation

  1. Pat the chicken dry, then season it well with salt, pepper, and garlic powder if desired.
  2. Heat olive oil and butter in a skillet over medium to medium-high heat.
  3. Sear the chicken for a few minutes per side until golden. It does not have to be fully cooked through as it will finish in the sauce.
  4. Remove the chicken from the skillet and place it on a plate.

Making the Sauce

  1. Lower the heat and add minced garlic to the same skillet. Stir for about 20-30 seconds until fragrant but not browned.
  2. Add chicken broth and scrape the browned bits from the pan.
  3. Stir in heavy cream and bring to a gentle simmer before adding Parmesan cheese, stirring until smooth.
  4. Return the chicken to the skillet, cooking for a few more minutes until fully cooked and coated in sauce.

Notes

For a flavorful sauce, don’t rush the cooking process and ensure the cheese melts smoothly. The sauce thickens as it cools, and you can adjust the thickness with a splash of broth if needed. Taste before serving to adjust seasoning.
