Description

A quick and delicious side dish featuring fresh zucchini coated in a flavorful garlic butter sauce, perfect for summer grilling.


Ingredients

For the Skewers

  • 4 medium Fresh zucchini (Look for zucchini that is 6 to 8 inches long.)
  • 1/4 cup Butter (Salted or unsalted works.)
  • 3 cloves Garlic (Fresh minced is best.)
  • to taste Salt
  • to taste Black pepper
  • optional Chopped parsley or basil (For garnish.)
  • optional Lemon zest or a squeeze of lemon (To brighten flavor.)


Instructions

Preparation

  1. Soak wooden skewers in water for 20 to 30 minutes if using them.
  2. Preheat your grill to medium heat.
  3. Trim the ends of the zucchini and cut them into thick coins or half moons (approximately 1/2 inch thick).
  4. Thread the zucchini onto skewers, ensuring they are not packed too tightly.
  5. In a small saucepan, melt butter over low heat and add minced garlic. Stir for 30 to 60 seconds.
  6. Turn off the heat and stir in black pepper and any chopped herbs, if desired.
  7. Brush or spoon the garlic butter sauce over the skewers on both sides.

Grilling

  1. Place the skewers on the grill and cook for 6 to 10 minutes total, turning every couple of minutes.
  2. Brush on a little extra garlic butter at the end before serving.

Serving

  1. Serve hot with a pinch of salt and chopped herbs, if desired.

Notes

These skewers can be served as a side to meats or enjoyed on their own. Best served immediately but can be stored in an airtight container in the fridge for up to 3 days.
