A quick and delicious side dish featuring fresh zucchini coated in a flavorful garlic butter sauce, perfect for summer grilling.
Ingredients
For the Skewers
- 4 medium Fresh zucchini (Look for zucchini that is 6 to 8 inches long.)
- 1/4 cup Butter (Salted or unsalted works.)
- 3 cloves Garlic (Fresh minced is best.)
- to taste Salt
- to taste Black pepper
- optional Chopped parsley or basil (For garnish.)
- optional Lemon zest or a squeeze of lemon (To brighten flavor.)
Instructions
Preparation
- Soak wooden skewers in water for 20 to 30 minutes if using them.
- Preheat your grill to medium heat.
- Trim the ends of the zucchini and cut them into thick coins or half moons (approximately 1/2 inch thick).
- Thread the zucchini onto skewers, ensuring they are not packed too tightly.
- In a small saucepan, melt butter over low heat and add minced garlic. Stir for 30 to 60 seconds.
- Turn off the heat and stir in black pepper and any chopped herbs, if desired.
- Brush or spoon the garlic butter sauce over the skewers on both sides.
Grilling
- Place the skewers on the grill and cook for 6 to 10 minutes total, turning every couple of minutes.
- Brush on a little extra garlic butter at the end before serving.
Serving
- Serve hot with a pinch of salt and chopped herbs, if desired.
Notes
These skewers can be served as a side to meats or enjoyed on their own. Best served immediately but can be stored in an airtight container in the fridge for up to 3 days.
