  • 2-3 medium Fresh zucchini (Look for firm ones with smooth skin.)
  • 2 tablespoons Butter (This is where the flavor starts.)
  • 1 tablespoon Olive oil (Helps keep the butter from burning too fast.)
  • 2-4 cloves Garlic, minced (Use more if you love garlic.)
  • 1/2 teaspoon Salt (Adjust to taste.)
  • 1 twists Black pepper (To taste.)


Instructions

Preparation

  1. Slice the zucchini into half moons, about 1/4 inch thick.
  2. Heat a large skillet over medium-high heat and add the olive oil and butter.

Cooking

  1. Add zucchini to the pan in a single layer and let it sit for 2 minutes without stirring.
  2. Stir in salt and pepper, and cook another 3 to 5 minutes until tender but not mushy.
  3. Add minced garlic during the last 30 to 60 seconds of cooking.

Finishing

  1. Taste and adjust seasoning. Add optional lemon, parsley, or parmesan if desired.

Notes
