- 10 cups popped popcorn (Plain or lightly salted; avoid heavy butter flavor.)
- 5 tablespoons unsalted butter (Can use salted butter; adjust salt accordingly.)
- 10 ounces mini marshmallows (Use fresh marshmallows for best results.)
- 1 teaspoon vanilla extract (Clear vanilla is preferred for cake batter flavor.)
- 1/2 cup rainbow sprinkles (Classical rainbow jimmies work best.)

Preparation
- Pop your popcorn and measure about 9 to 10 cups into a very large bowl.
- In a big pot on low heat, melt the unsalted butter.
- Add the mini marshmallows and stir until smooth.
- Stir in the vanilla extract, then remove from heat.
- Pour the marshmallow mixture over the popcorn and gently fold until coated.
- Fold in the rainbow sprinkles last, just a quick mix.
- Press the mixture into a prepared 9×13 inch pan that has been lined with parchment paper and lightly greased.
- Let it cool for about 45 minutes at room temperature, then cut into squares.
Notes
To prevent the popcorn from getting crushed, use a large bowl for mixing and fold gently. Press just enough to hold together without crushing the popcorn. Store in an airtight container at room temperature.
