Description
A creamy, crunchy, and spicy salad perfect for summer cookouts that combines sweet corn, cheesy goodness, and crisp Fritos.
Ingredients
Salad Base
- 3-4 cups Corn (canned or fresh) (Fresh corn works great but drain canned corn well.)
- 1 cup Shredded cheese (cheddar or Mexican blend) (Cheddar is a classic choice.)
- 1/2 cup Diced red onion (Use less for a milder flavor.)
- 1 cup Diced bell pepper (Any color bell pepper can be used.)
- 1-1.5 cups Fritos (regular or chili cheese flavor) (Add just before serving for crunch.)
Dressing
- 1/2 cup Mayonnaise (You can adjust to taste.)
- 1/2 cup Sour cream (Greek yogurt can be substituted.)
- 1-2 tablespoons Taco seasoning or chili powder blend (Taste and adjust seasoning.)
Optional Add-Ins
- to taste Diced jalapeno (For extra heat.)
- to taste Lime juice (To add freshness.)
- to taste Chopped cilantro (Adds an herby flavor.)
- to taste Black beans (For added protein.)
Instructions
Preparation
- In a large bowl, add the corn, diced onion, and bell pepper.
- Stir in the shredded cheese.
- In a separate bowl, mix the mayonnaise, sour cream, and taco seasoning. Taste and adjust as necessary.
- Pour the dressing over the corn mixture and stir until everything is coated.
- Just before serving, fold in the Fritos. Keep chips separate until it’s time to eat if transporting.
Notes
Best served fresh to maintain crunchiness of Fritos. Can be made ahead but keep Fritos separate. Stash in the fridge before serving for optimal flavors.
