  • 3-4 firm green tomatoes (Choose solid tomatoes with smooth skin.)
  • 1 cup all purpose flour (For breading.)
  • 2 large eggs
  • 1-3 tablespoons buttermilk or regular milk (Used in egg mixture.)
  • 1 cup cornmeal (Can substitute with half cornmeal and half breadcrumbs.)
  • 1 teaspoon paprika
  • 0.5 teaspoon garlic powder (Optional but recommended.)
  • Oil for frying vegetable, canola, or peanut oil (For frying the tomatoes.)
  • Salt and black pepper (To taste.)


Instructions

Preparation

  1. Slice the tomatoes about a quarter inch thick.
  2. Lay slices on paper towels, sprinkle both sides with salt, and let them sit for 10 minutes.
  3. Blot the tops to remove excess moisture.
  4. Set up three bowls: flour in the first, eggs and a splash of milk in the second, and cornmeal mixed with paprika, pepper, and garlic powder in the third.
  5. Bread each slice: flour first, then egg, then cornmeal, pressing lightly for the coating to stick.

Cooking

  1. Heat about half an inch of oil in a skillet over medium to medium-high heat.
  2. Fry in batches for about 2 to 3 minutes per side until golden brown, avoiding crowding the pan.
  3. Transfer to a wire rack or paper towels and sprinkle with a tiny pinch of salt while hot.

Dipping Sauce (Optional)

  1. Mix together mayo, hot sauce, lemon juice or pickle juice, garlic powder, and optional sweet relish for a quick spicy dipping sauce.

Notes

Serve immediately for best texture. You can keep them crispy by using a wire rack and avoiding stacking. Leftovers can be refrigerated and reheated in the oven or air fryer.
