Scale
Main Ingredients
- 1 lb Smoked sausage or kielbasa (Choose your preferred type of smoked sausage.)
- 1 head Green cabbage (Sliced into ribbons.)
- 1 Onion (Sliced.)
- 2 tbsp Butter or bacon grease (For sautéing.)
- 3 cloves Garlic (Optional, minced.)
- 1 tbsp Apple cider vinegar or white vinegar (For brightness.)
- 1 tsp Salt
- 1/2 tsp Black pepper
- 1 tsp Paprika or smoked paprika
- 1/4 tsp Red pepper flakes (Optional.)
Instructions
Preparation
- Slice the sausage into coins or half moons.
- Brown the sausage in a large skillet over medium heat, then scoop it out to a plate.
- Add butter or bacon grease to the skillet, then sauté the onion for a few minutes.
- Add the cabbage and a pinch of salt, toss, and cover for a few minutes.
- Stir occasionally and let the cabbage soften and brown in spots for 10-15 minutes.
- Add garlic and the seasonings, then return sausage to the skillet.
- Finish with a splash of vinegar and taste for salt and pepper.
Notes
For best results, brown the sausage first to build flavor. Options like andouille sausage can add a spicy kick. You can make it low-carb by adding more non-starchy vegetables like bell peppers or zucchini.
