Flavor Base

  • 2 large yellow onions (Caramelized for depth of flavor.)
  • 2 tablespoons butter (For caramelizing the onions.)
  • 1 tablespoon oil (Helps prevent butter from burning.)
  • 1 cup French onion soup or condensed French onion soup mix (For signature French onion flavor.)
  • 1 tablespoon Worcestershire sauce (Adds umami flavor.)

Instructions

Preparation

  1. Thinly slice the yellow onions.
  2. In a skillet, heat butter and oil over medium heat, then add the onions with a pinch of salt. Cook until caramelized (soft and golden or deeper brown).

Mixing the Meatloaf

  1. In a large bowl, combine ground beef, bread crumbs, eggs, Worcestershire sauce, caramelized onions, and any garlic. Mix gently with hands just until combined.
  2. Shape the mixture into a loaf.

Cooking in Slow Cooker

  1. Prepare your slow cooker with a foil sling to lift out the meatloaf. Carefully place the shaped loaf in the slow cooker.
  2. Cook on low for 5-6 hours or high for 2.5-3.5 hours.
  3. About 20-30 minutes before done, spoon more French onion soup over the top.
  4. In the last 10-15 minutes, add Swiss cheese on top to melt.

Serving

  1. Once cooked, remove the meatloaf using the foil sling and allow it to rest for 10 minutes before slicing.

Notes

To keep meatloaf moist, don’t skip the resting time. You can caramelize onions up to 3 days in advance. Leftovers store well in the fridge for up to 4 days.
