Main Ingredients
- 4-6 pieces Bone-in, skin-on chicken thighs (Thighs stay juicy, and skin becomes crispy.)
- 1.5-2 pounds Baby potatoes (Baby golds or reds are preferred.)
- 8 ounces Mushrooms (Cremini or button mushrooms work.)
- a few strips Bacon (Optional but recommended for flavor.)
- 1 medium Onion or shallot (Chopped for the sauce.)
- 2 cloves Garlic (Minced for flavor.)
- 1 tablespoon Tomato paste (Adds depth to the sauce.)
- 1 cup Red wine (Use a dry wine like cabernet or pinot noir.)
- 1 cup Chicken broth (For the sauce.)
- 1 teaspoon Dijon mustard (Enhances the sauce flavor.)
- 1 teaspoon Thyme (Can use fresh or dried.)
- to taste Salt and pepper (For seasoning.)
- 2 tablespoons Oil or butter (For browning the chicken.)
Instructions
Preparation
- Preheat the oven to 400°F (200°C).
- Pat the chicken thighs dry with paper towels and season with salt and pepper.
- Slice mushrooms thickly, chop onion, mince garlic, and halve baby potatoes.
- If using bacon, cut it into small pieces and cook in a skillet until crisp. Set aside and leave some fat in the pan.
Browning Chicken
- Heat the skillet over medium-high heat, add oil if needed, and place the chicken skin-side down.
- Brown the chicken for 6-8 minutes without moving it, until golden. Flip and brown the other side for 2-3 minutes.
- Remove the chicken from the skillet and set aside.
Making the Sauce
- In the same skillet, add chopped onion and mushrooms, cooking until slightly browned.
- Add minced garlic for about 30 seconds, then stir in tomato paste and let it cook for another minute.
- Pour in the red wine, scraping up any browned bits from the bottom of the pan. Simmer for a few minutes.
- Add chicken broth, thyme, and Dijon mustard, stirring to combine.
Combining and Baking
- Add halved potatoes to the sauce and toss to coat.
- Nestle the browned chicken thighs on top skin-side up.
- Cover with a lid or foil and bake for 35 minutes.
- Remove the lid/foil and bake for an additional 10-15 minutes until the skin is crisp and the sauce has thickened.
Checking for Doneness
- Ensure the chicken is cooked to an internal temperature of 175°F to 185°F.
- Check potato tenderness by piercing with a fork; it should slide in easily.
- If potatoes are firm, remove the chicken and keep baking potatoes until tender.
Notes
Serve with crusty bread, a simple green salad, and vegetables like steamed green beans or sautéed spinach. This dish can be prepared ahead and reheated with great results.
